‘Gyotaku’ blend is designed to be paired with sushi, though don’t feel obligated in that regard. Its complexity and textural palate would go well with a range of dishes. It ferments with indigenous yeasts and ages in large old foudres. Tropical fruit and spiced pear are cut by a persistent, lip-smacking citrus. Certified organic, certified biodynamic, low-intervention/natural wine.
